Ingredients:
• Can of Chop Chop! Chicken with Chilli
• 2 tortilla wraps
• ½ cup mozzarella or colby cheese, grated
• 1 spring onion, chopped
• ½ red capsicum, finely chopped
• Lite sour cream
• Salsa
Directions:
- Mix chicken, cheese, spring onion and capsicum in small bowl.
- Spread mixture on a tortilla and top with the second tortilla.
- Cook for a minute and a half on each side in a dry non-stick frying pan, medium heat.
- Serve the quesadilla cut in quarters with sour cream and salsa.
