Smoked Chicken BBQ Pizza

Ingredients:
Base
1 1/2 cups plain flour
1/2 tsp salt
2 Tbs olive oil
3/4 cup water
Place all ingredients in a food processor and process until formed into a ball. Mould by hand into a smooth ball and push out into an oiled 20cm pizza based. Prick base.

Topping
Can of Chop Chop! Smoked Chicken 160g, drained
20cm pizza base (see recipe above)
Chunky BBQ sauce
1/2 cup mozzarella cheese, grated
Handful of black olives, pitted
1/2 tomato, chunks
1/4 red onion, sliced
1/2 cup bocconcini cheese (or brie), wedges
Pesto
Fresh thyme

Directions:
Cover base with chunky BBQ sauce and sprinkle with mozzarella. Top with Chop Chop! Chicken, olives, tomatoes, red onion and bocconcini. Fan bake at 200 degrees for 20 minutes or until base is slightly brown. Garnish with dollops of pesto and fresh thyme sprigs before serving.
