Mexican Tortilla Melt (Quesadilla)

Ingredients:
Can of Chop Chop! Chicken with Chilli
2 tortilla wraps
1/2 cup mozzarella or colby cheese, grated
1 spring onion, chopped
1/4 red capsicum, finely chopped
Lite sour cream
Salsa

Directions:
Mix chicken, cheese, spring onion and capsicum in small bowl. Spread mixture on a tortilla and top with the second tortilla. Cook for a minute and half on each side in a dry non-stick frying pan, medium heat. Serve the quesadilla cut in quarters with sour cream and salsa.
