Mexican Chicken Filling

Ingredients:
Use this filling with corn-chips, tacos or tortillas

Can of Chop Chop! Chicken in Springwater & Sea Salt 160g, drained
2 spring onions
1/2 tablespoon of olive oil
1/2 can whole kernel sweetcorn, drained
Pinch of dried oregano
Pinch of cumin
Pinch of chilli powder
Salt & pepper
1/4 cup of sour cream

Directions:
Chop spring onions and fry in saucepan with oil. Add all remaining ingredients except for Chop Chop! Chicken and heat until hot. Gently stir in Chop Chop! Chicken just before serving. Serve with lettuce, tomato, cheese and sour cream on tacos or tortillas or with salsa, cheese and sour cream on corn-chips for tasty nachos.
