Japanese Rice Balls (Onigiri)

Ingredients:
Can of Chop Chop! Chicken with Chilli
2 cups of cooked sushi (short grain) rice
1/4 red onion, finely chopped
1/4 red capsicum, finely chopped

Directions:
Mix chicken, onion and capsicum in a bowl. Cook the rice, and let it cool enough to handle. Wet your hands and sprinkle them with salt to prevent the rice from sticking to them. Mould a handful of rice into a triangular shape with a dent in the middle. Fill the dent with chicken mixture and cover up with small amount of rice. Makes 8.
